“Stay off your clock” means don’t waste the 14 hours you can work before a 10 hour sleeper/off-duty period by just sitting. For example, if you get to a customer with a reputation for long waits, check in with that customer and then go into the sleeper. If you get 8 hours in the sleeper that freezes your 14 hour clock to the time remaining when you began your sleeper time.
